something I have been tinkering around with for a while
for some reason manipulating fats feels rewarding
here we wanted to create a gummi bear texture with a fat
now that we have it all figured out we can use any fat imaginable
this will be rolled in nitro pecan dust
ingredients used:
glucose
isomalt
sugar
water
gelatin
pecan oil (jean marc)
propylene glycol alginate
cellulose gum
wondering if pectin would be a better substitute for gelatin
Propylene glycol alginate? Great, another one for me to track down.
That finished product looks amazing. I’m not going to ask about proportions, but what is the general procedure?
I was looking ideas on a method to make a spreadable olive oil “butter” just last night… and this came up in my research: (perhaps it could help/serve as a further reference point?)

Hey Chef, have you tried working with agar agar? it has a kind of unique texture and i think it would do nice with pecan flavor.
I really want the recipe for this, or if you have a standard ratios that would be evn better. thanks
