The peach is compressed and then bruleed. We serve it with a brown butter crumble and honey-mascorpone cream….
no joke i had just added this to my ideas earlier today while working on ideas for a dinner when i get back from sweden.
my version was to cook a peach crumble then take off the cooked crumble with the peach goo and not serve the cooked peaches, then take compressed peaches for the uncooked flavor, and pair that cooked flavor of the crumble with peach goo and and whipped lime was the idea. great looking dish.
