Hey, I work here in atlanta with Blais and Eli, about a month ago I tried this idea, but the process i used a ENO was, I thickend water with cornstarch and then dehydrated it overnight. then fried it and dusted it in adobo spice. it was good but i was going for the whole Homaro Cantu packing foam idea, you know long cylindrical pieces, i am just curious as to what your process was?
ohh i see its pork rines, i thought it was edible packing foam.
how do you make them so fluffy, i’ve had a hard time with these?
